See how to make a traditional Victoria sponge cake, submitted to Allrecipes by apple.strudel, originally from Derbyshire. Her Victoria sponge is made by weighing the flour, sugar and butter to the same weight as the eggs – ensuring perfect results every time!

As any good Victoria sponge should, this cake is sandwiched with strawberry jam and freshly whipped cream. Of course, you could embellish this however you’d like – filling with lemon curd and cream, for example, would work a treat!

  1. Hi, do you have to weigh the eggs whilst they are in the shell? Or once you've cracked them? What if the eggs weigh more than 150g? Do you reduce the rest of the ingredients or add another egg and increase everything else? Thanks x
